...17;m typing on to communicate with the outside world, to the electric light burning beside me. Bless the BBC for making Tudor Monastery Farm (a title which I believe would not fly on American television). This is a quiet series showing three historians/archeologists at play in the Weald & Downland Open Air History Museum, trying out some of the skills they’d need to be tenant farmers to the local monastery. It has some of the structure...

Stern Sprouted Wheat Vegan Cookie or Health Bar Type Things

...Then let it sit around at room temperature. Give it a rinse every morning and every night until it sprouts. Toss it around a bit so it aerates. Wheat will sprout in 24- 36 hours, depending on temperatures. I should pause here to point out that since this all happens at room temperature, you want to be careful about cleanliness. Keep your hands and tools and containers very clean. Don’t let the sprouts get too long (i.e. too old)  when makin...

Recipe for the World’s Best Whole Wheat Pancake

...with a sourdough starter. The heirloom grain I used is Sonora wheat, probably the oldest wheat in the Americas. It’s a soft, winter wheat traditionally used for tortillas. Recipe (based on Nancy Silverton’s pancakes) 210 grams starter 2 tablespoons maple syrup 3 tablespoons safflower or corn oil 2 eggs 1/2 teaspoon sea salt 1/2 teaspoon baking soda 1 teaspoon baking powder The night before making these pancakes I take a tablespoon o...

An update on Phoebe

...s a really good run for a cat born with a ridiculous handbag for a heart. We can’t hope for too much more. It is possible that her heart simply can’t function well enough any more to sustain her, but we’re hoping that an adjustment of her meds will buy her a few more good months, and we’ll be able to bring her home tomorrow night. We won’t know until tomorrow. It’s hard to leave a pet behind in a vet’s of...

Can Whole Wheat Solve the Wheat Allergy Problem?

...asses for amateur bakers, is showing how tasty baked goods can be that are made from real whole wheat flour. But it’s tricky. High extraction whole wheat flours are a lot less uniform than white flours. And they suck up a lot of water when you use them for making bread. As the co-founder of the Los Angeles Bread Bakers I get the gluten sensitivity question a lot which is why I’m interested in hearing from readers. Do you have a wheat...

Does Sourdough Offer Hope for the Gluten Intolerant?

...myces cerevisiae, to make bread rise quickly. But even before Pasteur, bakers used the yeast remaining from beer making (also a strain of Saccharomyces cerevisiae) to make doughs rise. Sourdough cultures are not as powerful and predictable, so it’s understandable that commercial bakers would want a more dependable alternative. What is in a sourdough culture? There are many strains of yeast in sourdough cultures, but the main one is Candida...

2013 in Review Part I

...got a lot of work to do. Thankfully, I’m back to running and fencing. February In February in Los Angeles it should rain. It didn’t. The year was the driest on record: 3.6 inches, making it a desert not the Mediterranean climate it should be. It seems to be a dry winter again this year and I’m worried. March A texting music video producer totaled our car and thus began a six month experiment in living without a car in Los Ange...

Why are the pockets on women’s clothing so lame?

...nd we figure we may as well carry extra stuff–because why not? We have to carry the !&^%$  bag anyway. It’s a terrible cycle. Another belief seems to be women don’t want pockets because they will bulk up the sleek lines of our fashions, making us look chunky through the hips. And it is true that form-fitting clothing does not leave room for bulky pockets. There are indeed occasions and outfits that call for a handbag. For in...

I like my chamomile stressed

...Mrs. Homegrown here: I made a mistake–I predicted a while ago that this would happen, and here it is. When we remodeled the yard and I set aside space for The Phan of Pharmacy ™ my goal was to maximize the production of herbs and flowers.  I prepped the ground in the fan like a fine flower or veg bed: double dug and richly amended. It was only after I planted my chamomile starts in it that I realized the soil was way too r...

Mud for the People! Building an Adobe Garden Wall

...and/clay mixtures drying in the sun. You can also make a brick out of whatever soil you have on hand and see how it holds up. The first test Kurt did was drop one on a corner from about waist high. It didn’t break and thus passed the test. Another test is standing on a brick. Even though the brick we used weren’t really finished drying, they still passed. For a building that will be inspected you will probably have to send bricks to...
