Cargo Bike Roundup

...n has forgotten every word of his college German, so all we can make out is that this bike represents the Grüne Liga, some sort of environmental organization. Don’t know if this trike is an ad, or if the Grüne Liga uses it to distribute literature or environmentally correct currywurst. We imagine this bike belongs to some way eurotrashy DJ dude who uses it to shuttle his 100 kilo collection of Eurodisco hits to all the hot Berlin nightclu...

Age of Apocalypse

...rgin America’s individualized entertainment programming. Satellite TV! Shop Ebay at 30,000 feet! I shut the TV off and picked up a book, but I kept getting distracted by the screen I could see in the row in front of me. It was displaying a nonstop parade of gruesome images–mangled corpses, gunshot wounds–what passes for “entertainment” on mainstream television. Which brings me back to the Age of Limits conference. In...

Does Sourdough Offer Hope for the Gluten Intolerant?

Lactobacillus sanfranciscensis. In the last 20 years bakers around the world have revived the art of baking with a sourdough culture. At first this revival was related to flavor, but increasingly bakers are turning to sourdough cultures in the interest of health. It’s possible that the unique qualities of sourdough cultures may offer hope to those who think they are gluten intolerant or have an allergy to wheat.  A very short history of br...

Can Whole Wheat Solve the Wheat Allergy Problem?

I’m still recovering from the factoid barrage that is a baking class with Craig Ponsford. It felt like my brain had been tossed into the spiral mixer along with the hazelnut bread, danishes, English muffins, chocolate croissants, challah and pretzels doughs he showed us how to make in one action packed day. In between mixing and shaping Ponsford told us his theories about the wheat allergies that everyone seems to have. What’s set...

2013 in Review Part I

...needs and weaknesses. After many hours at the YMCA I’ve got PT syndrome under control but I’ve still got a lot of work to do. Thankfully, I’m back to running and fencing. February In February in Los Angeles it should rain. It didn’t. The year was the driest on record: 3.6 inches, making it a desert not the Mediterranean climate it should be. It seems to be a dry winter again this year and I’m worried. March A texti...

...a grain revolution. Here’s the secret: Use heirloom grains. Mill your own flour. Ferment for a long time with a sourdough starter. The heirloom grain I used is Sonora wheat, probably the oldest wheat in the Americas. It’s a soft, winter wheat traditionally used for tortillas. Recipe (based on Nancy Silverton’s pancakes) 210 grams starter 2 tablespoons maple syrup 3 tablespoons safflower or corn oil 2 eggs 1/2 teaspoon sea sa...

An update on Phoebe

iggers her treatment program. Phoebe is in heart failure–and has been for almost two years now. That’s a really good run for a cat born with a ridiculous handbag for a heart. We can’t hope for too much more. It is possible that her heart simply can’t function well enough any more to sustain her, but we’re hoping that an adjustment of her meds will buy her a few more good months, and we’ll be able to bring her h...

Fabulous Postcards from HenCam

From Vintage Chicken Photographs. Terry says this picture reminds her of Erik. It reminds me of our friend Craig at Winnetka Farms. Whichever! Let’s hear it for tall handsome gentlemen holding poultry! Our friend Terry over at the great chicken site HenCam has produced three lovely sets of postcard books based on antique photos of people with animals. One set is people and chickens, the second is people with other livestock, and the third...
