Looking for the Union Label

We’ve got a bad case of Ohrwurm, a German expression translated as “earworm” and used to describe a song stuck in your head. Our earworm came after a search for union made socks and underwear on the internets recalled a highly catchy ad jingle from the roller disco era, “Look for the Union Label” (youngsters can watch it on youtube here). We looked for the union label and we were surprised to find it via a company c...

Homegrown Evolution’s Self Watering Container video is up on the brand new site How to Homestead, described by its creators as: “the only site on the web providing you with a collection of how to homestead videos to stream or download. No longer relegated to the rural sphere, homesteading can be done anywhere and we are here to show you how.” With many homesteading activities, from chicken slaughtering to tortellini making, int...

Want to Make Bread? Get a Scale

Liquid measuring cup on left, dry on right. Get a scale for baking. The current issue of Cooks Illustrated Magazine has an interesting test of the accuracy of liquid versus dry measuring cups. When measuring flour, the dry measuring cup was up to 13% off when compared to a scale. The liquid measuring cup was even worse–26% off.  When baking bread, even 13% could be the difference between a decent loaf and a hockey puck. Surprising...

Our Daily Bread

This stunning documentary, directed by Nikolaus Geyrhalter in 2005, is the best film about our modern agricultural system that I have seen. It has no commentary, narration or interviews, just slow moving static and tracking shots. It proves that it’s better to simply show something and let the audience make up their own mind. That being said, I’d be surprised if many people would come out of a screening of this film and think that...

Gluten Intolerance . . . Is It All In Your Head?

As a co-founder of the Los Angeles Bread Bakers I go to a lot of public events where someone will walk up to me and announce that they are gluten intolerant. Their stories of getting off bread have the flavor of a religious conversion. My defensive reaction (I help run a bread club, after all) smacks of religious zealotry. We know with a great deal of certainty that gluten intolerance in the form of celiac disease effects slightly less than one...

99¢ Store Proofing Basket

For years I’ve used a special wooden basket called a banneton to proof my round loaves of bread in. I’m teaching a bread baking class this weekend and needed a bunch of proofing baskets for the class. Bannetons are nice but expensive so I decided to try using a canvas lined proofing basket as a more economical alternative. I got some metal bowls from my local 99¢ store. Wicker baskets or a plastic colander would also have worked,...
